Angie’s Table: Chicken & DumplingsYBy Angie Bridgesay it is October! While I’m fully aware that in this magnificent part of the world we live in that thedate doesn’t necessarily mean a chill in the air, we are hopeful people and just the idea that cooler temps are around the corner are enough for us to celebrate (admit it, you’ve already had a pumpkin spice coffee drink) and cooking heartier one pot meals like stews and soups.Few dishes make my husband happier than a bowl of chicken and dumplings. This Southern favorite comfort food evolved out of necessity and practicality, and I am here for it. Over the years. I have made this dish completely from scratch and enjoyed the process. However, in the spirit of honesty- who has time for all that anymore with your busy jobs and family?I’ve whittled down my recipe for Chicken and Dumplings to a much easier and quick dish that can have you at the table in about an hour without sacrificing any flavor. There are many versions of C&D out there using a few brilliant shortcuts for dumplings like canned biscuits, but I discovered a twist that will floor you (and I fooled my husband!) and I just know you and your family or guests will enjoy.Ciao for Now, AngieEasy San Antonio Chicken & Dumplings You’ll Need: 2 (32 oz.) cartons low sodium chicken broth, 1 rotisserie chicken (picked and hand shredded and set aside), 1 medium white onion, chopped, 3 stalks of celery, chopped, 2 cups frozen peas and carrots, 1 or 2 fresh jalapenos, seeded and chopped (optional but delicious), 2 TBS. poultry seasoning, 2 bay leaves, 6 to 8 HOMESTYLE flour tortillas cut into 4” strips,and salt & pepper to taste.Directions: Heat your soup pot over medium heat, add 1 tsp oil and add the vegetables and spices and cook for 2 minutes. Add the chicken broth, bring to a boil then reduce to a simmer until vegetables are tender (about 15 minutes), add chicken stir once, and then add tortilla strips, cover tightly (do not peek!) and simmer for another 10 minutes.
