Place in a glass dish with a lid (I use a 32 oz. Pyrex bowl with lid) place the onions and jalapeños if using. In a medium saucepan over medium heat combine the vinegar, water sugar and salt and heat until sugar and salt are dissolved completely. Carefully pour vinegar mixture over the onions and let cool to room temperature then refrigerate. Pickling-preserving foods in a vinegaror an acidic brine has been traced back to ancient Mesopotamia as far back as 2400 B.C. and used as a form of food preservation. Flash forward to the 21st Century and Americans alone consume about two million pounds of pickles a year.While you can go way deep into the pickling process and pickle so many delicious foods, I keep it much simpler at home especially because it’s just two of us and have no need to preserve larger quantities of food like a big family might, I stick with what’s called a “quick pickle” (or refrigerator pickle) that is simple and doesn’t require the canning process. Another reason I like to quick pickle is controlling the taste and salt content and encouraging the health benefits. The quick pickles last perfectly for more than a month in your refrigerator but they won’t stick around that long. My top three quick pickles that you might find at any given time in our house is cucumber, red onion, and pickled mushrooms. However, like I mentioned earlier, the number of items that you can pickle is vast and if you’re interested thereare a ton of excellent websites out there with tips and tricks to a successful pickle. This month I’m going to share my recipe for “pickled reds” as my husband calls them. Honestly, these bad boys are so good on so many things like tacos, sandwiches, salads, charcuterie boards and protein bowls lending that wonderful tangy bite that takes dishes over the top. There I was mobbed by thousands of other garage “salers.” I quickly realized this was my big break; they were all having lunch. So, looking at my handy dandy community map, I selected my next treasure hunt area—a whole subdivision. Homes in that area were so numerous that sellers had to be giving stuff away.Everywhere I went people told me they had just sold a chest of drawers to a guy about 15 minutes earlier. Okay. I decided to change my route and get ahead of this guy. I would go to the other end of town.By 2 o’clock I was really tired. And, I still hadn’t found a chest of drawers. However, the thought of finding a really good deal at the next sale kept me going. Also, my money was burning a hole in my pocket.I guess it was a drive for justice, aperseverance of purpose, or a garage sale hypnosis that drove me on. I was determined to beat the competition.Finally, my luck changed. I stumbled upon a garage sale and the house was somewhat obscured from sight. Bingo! A chest of drawers was sitting on the driveway. Eureka! I’d finally beaten my competition to it.I was so elated that I told the homeowners all about some guy who was obviously from out of town and beating us locals to all the good buys. Although I couldn’t really use the modern design of this chest of drawers, I was going to buy it anyway. Take that!Then the lady spoke: “I’m sorry,” she said. “There was a guy here a little while ago and he bought that. . .”Iwasdazed...Okay... I’m serving notice to this guy.
