Angie’s Table:The Honorable Hummussome on hand.Ciao for Now, AngieCopa’s Hummus San AntonioYou’ll Need: 2 (15 oz.) cans of chickpeas drained and liquid reserved, 1⁄2 cup tahini paste, 1⁄4 olive oil, 4 cloves of roasted garlic, juice from two lemons, 2 chipotle peppers in adobo (available in all grocers), and salt to taste. Garnish with drizzle of olive oil anda sprinkle of paprika and freshly chopped parsley. Serve with pita bread, crackers or veggies.Directions: In a food processor or blender add all the ingredients and whirl until smooth and creamy, adding the chickpea liquid as needed to help it blend. Alone in a foreign country with a 6 year old child she was faced with returning to US soil.She had given up a career to be a full- time wife and mother and I can’t imagine the strength and courage it took to start this new chapter. However, it has a lineage much older than that. Coming from Arabic origin, the spread of cooked chickpeas, tahini (sesame seed butter), lemon, garlic and olive oil has been traced back to cookbooks from the 13th Century and long been a staple food for the Middle East, North African and Mediterranean cultures with each civilization bringing in its own version. I’m here for them all as I’ve never met a hummus I didn’t like. Besides being served with pita bread as wedo at Copa, at home my favorite dippers are veggies like cucumbers, carrots, raw cauliflower and sugar snap peas.By now many of you who’ve visited Copa have tried our house hummus and I’m proud to say that it’s been on our menu for over 18 years! We put our own twist to it and I am going to share it with you all today. I encourage you to explore the world of hummus. It is not just made for dipping either. Hummus makes an excellent base for wraps and sandwiches, and believe it or not on pizza. Have some fun or if you just want to eat it.
