Angie’s Table: Let’s Fondue It!BTy Angie Bridgeshe oldest known recipe for Fondue comes from a sixteenth century Swiss cookbook. The dish wascalled “Kass mit Wein zu kochen” (cooked cheese in wine) and it asked for melted cheese and wine and bread to dip in it.The word Fondue comes from the French word “fondre” meaning “to melt”. It became popular in the mid-1950’s in the U.S. and reached the height of its popularity by the 1970’s when home entertainers would serve all sorts of melted cheeses, and even chocolate for their hungry guests to devour.My parents were great hosts and I remember seeing the grownups surround a pot of melty cheese with much happiness. I personally never lost my nostalgia for the classic fondue dinner party and have thrown a few cheese ragers in my day and I can tell you by far, the one that has made the biggest splash and one I like to repeat is a Blue Cheese Fondue and this monthI’m going to share with you how to do it. So dust off your fondue pot, or better yet ask a relative to borrow theirs, invite a few people over, gather around the table and watch a lovely evening commence full of delicious food and conversation. Bonus: It’s SO easy for the host too as prep is the hardest part and your guests take care of the “cooking and serving”.Until next month, Ciao for Now, AngieBlue Cheese FondueYou’ll Need: 3 TBS. unsalted butter, 3 TBS. All-purpose flour, 2 1⁄2 Cups whole milk, warmed, 1 Cup blue cheese, 4 oz. light cream cheese, salt & pepper to taste and assorted dippers. For this we like bread cubes, boiled fingerling potatoes, vegetables, grilled pineapple (trust me!) and grilled sausage. Directions: In your fondue pot melt the butter and stir in the flour cooking for about 2 minutes. Add warmed milk and stir until sauce thickens. Add s & p. Thenadd the cream cheese and blue cheese.
